This distinction concerns the Maîtres Canardiers : professionals who serve Caneton à la Rouennaise in their restaurant, using the original recipe for cooking duck which involves a Duck press, and the Gentilshommes or Dames Canardiers, gourmets who appreciate this special recipe and share the goals of the association.
